I hope you are all enjoying a wonderful and nourishing July.
I love summertime. There is something about the longer days, and bright sky that just nourishes my soul and being. Somehow it’s easier for me to slow down, take rest and enjoy. It’s like nature resets my nervous system and reminds me its ok to play and get out in nature, which I do often, taking time enjoying the local rivers, and forests.
How do you nourish yourself at this time of year?
Full Moon Blessings
I wanted to wish everyone a Happy Full Moon, and to encourage you to take time to slow down and really enjoy whatever your truth may be today. We have been in between 2 eclipses, a solar eclipse on July 2 and a lunar eclipse today. This is always an interesting time, as the eclipses can bring to light what has been hidden and wanting to come into the light. In our culture we are so used to a quest for happiness, and peace that we don’t always connect with the essential energy of love that is always present. We also don’t take time to fully receive the wisdom that is constantly being shared to us from the natural intelligence of our bodies and beings. I invite you to take some time today to tune in and reflect on how you are feeling, and what you might be experiencing in the multi dimensional level of your senses. Give yourself permission to connect with what may be there and ask for a message or a symbol of its purpose. If we listen and pay attention, we are often gifted with a key to exactly what we may need to support us on our path to remembering our natural state of wholeness. Celebrate who and what you are, and celebrate the fullness of the light of this moon, as a reflection of the light of yourself.
It is also the Full Moon of Guru Purnima, a day for honouring our teachers (celebrated yesterday in India), I want to take time to honour my mentor, and dear friend Dr. Paul Dugliss, for all he has brought to the world and to my life. I also want to honour all of my Yoga Teachers, Chi Kung Teachers, my clients and all the beings in my community who offer me so much wisdom in their teachings, connections and reflections. With all of you in my life, I continue to grow. Thank You
Recipe- Mint Cilantro Rice
Today I was inspired to share a favourite recipe from one of my favourite cookbook authors, Aparna Khanolkar’s Happy Belly Cookbook. It’s a perfect mix for summer: sweet basmati rice, summer vegetables, and fresh herbs to support digestion. I didn’t have green beans so substituted zucchini, and added in a sweet red pepper as well.

Mint- Cilantro Rice With Cashews And Vegetables
- 1 cup basmati rice
- 2 cups water
- 3/4 tsp salt
- 3 Tbs oil or ghee
- 1 cardamom pod
- 1 bay leaf
- 1 cinnamon stick
- 2 cloves
- 1 tsp cumin seeds
- 1/2 tsp turmeric
- 1 clove garlic finely chopped
- 1/2 small onion
- 1/2 inch piece of ginger grated
- 10 whole cashews
- 15 green beans trimmed and cut into 1 inch pieces
- 1/2 small head of cauliflower
- 1 medium carrot sliced thinly
- 1/2 tsp salt
In a blender mix and blend to a fine paste
- 1 bunch cilantro
- 15 mint leaves
- 1/2 tsp pepper.
Directions
Wash and rinse the rice well. Mix with water and salt in saucepan, bring to a boil and cover. Let cook on low for 15 minutes, then leave covered without opening for 5. In a large skillet heat the oil on medium and add the whole spices. Saute for 45 seconds or until the cumin starts to brown and smell toasted (do not overcook). Add the onion, garlic, ginger and turmeric and cook for about 6 minutes, until the onions are translucent. Then add the cashews and continue to cook for 2 minutes. Turn the heat up to high, add the veggies and cook about 4 minutes, stirring. Add the mint/cilantro mix and continue to cook and stir until the water is dissolved. Mix with the rice and enjoy.
